The Best Steakhouses in Utah

Utah has 24 steakhouses across 11 towns — Salt Lake City holds 7 and Park City 5, with the rest strung along the Wasatch Front and down toward Zion.

It is also the only state in this directory where the way a steakhouse serves you a drink has been shaped by law in a genuinely unusual way.

The Utah Ten

1. Maddox Ranch House (Perry) — open since August 1949 on Highway 89, four generations of the same family, and the state’s defining steakhouse. The founding story is below, and it involves a building on skids. The drive-in next door is part of the same operation.
2. Edge Steakhouse (Park City) — at the Westgate in Canyons Village, and the most serious beef programme in the state.
3. Sterling Steak + Lounge (Park City) — the newer, sharper arrival on the mountain.
4. Christopher’s Prime (Salt Lake City) — downtown, dry-aged, with the deepest wine list in Utah.
5. Timbermine Steakhouse (Ogden) — up Ogden Canyon in a timber-and-antiques room that looks like a film set and has been there for decades.
6. Carver’s Steak & Seafood (Sandy) — the south valley standard.
7. Grub Steak (Park City) — open since the 1970s, a salad bar and a wood fire, and the least fashionable room in a very fashionable town.
8. Switchback Grille (Springdale) — at the mouth of Zion National Park, with the canyon walls out of the window.
9. Tuscany (Salt Lake City) — a log-and-stone lodge in Holladay, steak alongside Italian cooking.
10. La Vaca Steakhouse (Provo) — Latin-influenced cuts in a university town that does not have many options.

A restaurant built on skids

During the Second World War, a welder named Irvin Maddox opened a seven-stool lunch counter on Main Street in Brigham City. He could not buy equipment, so he fashioned a stove plate out of an old coal oil burner and found a second-hand refrigerator. Wilma Kotter worked the front as hostess. They married, ran a place in Ogden called the Double J, and got tired of the commute.

In August 1949 they opened a small log-cabin-style building on Highway 89 in Perry — population then a few hundred. They built it on skids, deliberately, so it could be towed away if the town did not work out.

It worked out. Maddox Ranch House is now in its fourth generation and past 75 years. Crucially, Irv ran a cattle ranch alongside it, and the beef from that ranch was the whole proposition — the rarest arrangement in this directory and the oldest version of the ranch-to-table idea that everyone else now advertises.

Why the bar looks different here

Utah’s alcohol laws are unlike any other state’s, and they visibly shape how a steakhouse operates.

Until recently, restaurants opening after 2010 had to install what became known as the Zion Curtain — a partition seven feet two inches high separating the bartender from the room, so that nobody under 21 could watch a drink being mixed. HB442 removed that requirement in 2017, replacing it with a ten-foot buffer between where drinks are poured and where under-21s may sit. Plenty of rooms still carry the architecture.

Two other rules still apply and will affect your evening: beer sold in restaurants and grocery stores is capped at low strength, and happy hour and drink specials are illegal statewide. If you are used to ordering a cocktail at the bar while you wait for a table, expect it to work differently.

None of which has stopped Park City and Salt Lake building a real steak scene — it just means the wine list is doing more work than the bar.
