What Walker’s is
Walker’s calls itself an American brasserie, not a steakhouse, and the distinction is honest — the menu rotates seasonally and the steak is one strong option rather than the entire premise. It is on Third Street in downtown Muskegon.
The steak
The standing cut is a 12oz hand-cut Certified Angus Beef New York strip, plated with a harissa honey glazed rainbow carrot, garlic whipped potato and rojo chimichurri. Hand-cut is the operative word — the kitchen is portioning its own strip loin rather than opening a case of pre-cut steaks, and Certified Angus Beef is a branded program that sits above commodity Choice on marbling and consistency.
The restaurant also runs à la carte proteins that change with the season, including W4 wagyu and bone-in filets. Those rotate, so call ahead if wagyu is the reason you are going.
The rest of the menu
This is west Michigan and the kitchen cooks like it: walleye as fish and chips, seared salmon, a Cajun pasta with tenderloin and shrimp. There is a full wine list built for pairing.
Menu prices
From Walker’s current food menu: New York strip $41, walleye fish and chips $29, seared salmon $27, Cajun pasta $26, chicken florentine $24. Add-ons run $6 for chicken, $10 for salmon, $12 for grilled shrimp. Wagyu and bone-in filet pricing is not published and varies with the season.
