Why Eddie Merlot’s made the SteakMap list
Two things earn this Bloomfield Hills room its place, and the first is stated at the top of the steak section rather than buried: hand-cut in house, aged a minimum of 28 days.
Both halves matter. Hand-cutting means the kitchen breaks down primals itself and controls thickness and grain. A stated minimum age means aging is a policy applied to the whole board, not a claim attached to one showpiece.
Wagyu with the producer named
The wagyu section is unusually honest about where the beef comes from. A Rangers Valley MS9+ filet mignon from Australia at 6oz and 8oz. A Rangers Valley MS7/8+ ribeye at 16oz. And an 18oz American wagyu bone-in strip from Snake River Farms in Idaho.
Offering two marble scores from the same producer is the clever part. MS9+ is intensely rich and best in small portions; MS7/8 gives you real marbling with enough restraint to finish a full steak. Most menus put up a single wagyu and leave you guessing where it sits.
The rest of the board
All USDA Prime: New York strip at 12oz and 16oz, a 16oz ribeye, a 22oz bone-in Cowboy Cut, and filet mignon at 8oz and 12oz. The Prime Bourbon Ribeye is the house variation, finished with bourbon, brown sugar and onion straws.
A 6oz bison filet gives the table a leaner option — bison is more mineral than beef and needs a cook who will pull it early — and there is a rack of lamb from Thomas Farms in Australia.
The composed filets suit smaller appetites: a Trio of Medallions Oscar-style with peppercorn sauce and bacon gorgonzola, a Filet Del Mar with crab and shrimp, and a New Orleans Mixed Grill with blackened shrimp and andouille.
