Why Big Rock made the SteakMap list

Big Rock runs a section of the menu called the Butcher’s Edition, and it is effectively a world tour of beef with the country of origin printed beside every cut. SteakMap has not found a more educational five lines on any American menu.

12oz grass-fed New York strip — Southern Ranges, Australia

12oz Wagyu Manhattan, bone-in and dry-aged — Westholme, Australia
12oz Wagyu strip steak — Rosewood, USA
28oz Prime rib chop — USDA Prime, USA

Order any two of those together and you learn something. Grass-fed Australian beef is lean and mineral; Piedmontese is a lean Italian breed that eats cleaner still; Westholme wagyu is heavily marbled and, bone-in and dry-aged, is doing three things at once. Most steakhouses give you one grade and one origin and leave you to guess.

The Italian side is real

This is an Italian chophouse rather than a steakhouse with pasta bolted on. The porcini crusted filet mignon comes with potato gnocchi and gorgonzola cream. There is a truffle goat cheese ravioli with wild mushrooms, a fettuccine with braised veal meatball, chicken saltimbocca with porcini, prosciutto and a marsala reduction, and a veal parmesan in San Marzano tomato with stracciatella.

Even the steak additions lean Italian — porcini butter, cambozola peperonata.

The everyday board

All USDA Prime: filet mignon at 8oz and 10oz, a 14oz New York strip, a 16oz Delmonico ribeye, a 16oz Duroc pork chop and lamb chops.
