Why Larsen’s made the SteakMap list

Larsen’s ages its beef twice, in two different ways — first dry, then wet-aged a further fourteen days. Almost nobody does this. In the whole of SteakMap we have found only a handful of kitchens running a sequential two-stage program, and it is always a sign that somebody is paying close attention.

The logic is sound. Dry-aging evaporates moisture and lets the meat’s own enzymes break down connective tissue, concentrating flavor into something richer and more buttery. The wet stage that follows holds that flavor in vacuum without losing any more weight. You get dry-aged character without dry-aged dryness.

A butcher on site at all times

The detail that backs it up: Larsen’s keeps a skilled butcher at the location at all times, monitoring airflow, temperature and humidity in the aging room.

That is a full-time salaried position dedicated to watching meat sit still. It is the single most expensive way to prove you mean it, and it is the reason this beef program is worth a detour.

The man who built it

Flemming Larsen founded the group, and he came to it from the correct direction — he started in 1984 as a meat cutter for Danish American Farms in California, then became owner-operator of a Danish bakery and restaurant in Solvang in 1991 before building the steakhouses.

A steakhouse founded by a butcher rather than a restaurateur explains the aging room entirely.

The Valencia room

This location is at 24320 Town Center Drive in Valencia, in the Santa Clarita Valley north of Los Angeles. It is one of five Larsen’s rooms in Southern California, alongside Oxnard, Woodland Hills, Encino and Simi Valley, all sharing the same beef program. Seafood is flown in daily.

Prices

Larsen’s does not publish a machine-readable priced menu, so SteakMap has no verified figures to quote. The board includes a 32oz prime dry-aged porterhouse at the large-format end.
