Why the Rochester Chop House made the SteakMap list
The cut that earns it: a 14oz dry-aged ribeye infused with Detroit Distillery bourbon.
Aging beef in contact with spirits is a genuinely experimental technique — it is neither dry-aging alone nor a marinade — and doing it with a named local distillery rather than a generic bourbon is what separates a collaboration from a gimmick. Michigan is now the only state where SteakMap has found two kitchens doing whiskey-aged beef, this one and Prime + Proper in Detroit.
Excalibur style and zip sauce
The signature preparations are pure metro Detroit. Excalibur Style comes with hotel black butter — a compound butter tradition that has largely disappeared from American menus. And there is a house Rochester zip sauce, the dark, savory, beef-drippings sauce invented in this metro in the 1940s and essentially unknown outside it.
If you have never had zip sauce, this is a good room to try it: the kitchen makes its own rather than buying it in.
The board
A 34oz tomahawk with porcini truffle butter sits at the top. Below it a 22oz bone-in ribeye, a 14oz Delmonico the menu calls the butcher’s choice for marbling, a 16oz New York sirloin, and center-cut filet at 7oz, 9oz and 12oz.
The 14oz Wagyu New York comes with Stoney Creek mushrooms and au jus — another local sourcing note on a menu full of them.
Tenderloin combinations
A 7oz center-cut filet can be paired with gulf shrimp scampi, two Maryland crab cakes, or a 6oz Maine lobster tail. Steaks come with a choice of side, with an upgrade to jumbo asparagus with béarnaise or Chop House hash browns.
There is also Bell & Evans bone-in chicken with asiago gnocchi, and Australian lamb chops with a rosemary mint glaze.
Prices
The Rochester Chop House does not publish prices on its online menu, so SteakMap has no verified figures to quote. The cuts, weights, sourcing and signature preparations are all published.
