Why Corner Chophouse made the SteakMap list
Corner Chophouse builds around three things — dry-aged steaks, Florida seafood and market produce — and it prices the dry-aged cuts high enough that you can tell they are the point rather than a decoration.
The dry-aged pair
Two cuts carry the program, both Prime, bone-in and 20 ounces: a dry-aged New York strip and a dry-aged ribeye, each at $130. Bone-in and dry-aged together is the combination that rewards the method most — the bone insulates one face of the steak while the aged exterior builds a deeper crust.
The restaurant does not publish how many days it ages them, so SteakMap quotes no figure.
The wagyu
The wagyu is a 12oz Jack’s Creek strip. Jack’s Creek is an Australian producer with a genuine international reputation, and naming the farm rather than writing “wagyu” and leaving it there is the mark of a kitchen that knows what it bought.
The rest of the board
Below the aged cuts sit a 16oz Prime ribeye, a 14oz Prime New York strip and an 8oz filet mignon. Above them, for the table: a 28oz cowboy ribeye and a 38oz porterhouse.
