Why the Oregon Grille made the SteakMap list

Maryland is a seafood state, and most of its good restaurants know it. The Oregon Grille is one of the few that decided to be a beef house anyway — and then went further than almost anyone in the region.

The board carries an 18oz dry-aged Prime cowboy ribeye, a 34oz dry-aged porterhouse for two, and a 36oz Wagyu tomahawk. Three serious cuts on one menu is unusual in any state; in Maryland it is close to unique.

The dry-aged bison

The cut worth traveling for is the 12oz dry-aged bison ribeye. Bison is leaner and more mineral than beef and generally sold fresh, because it has less fat to survive an aging room. Dry-aging it is a genuinely uncommon thing to attempt, and SteakMap has not found another kitchen doing it.

Beside it sits a 14oz Iberico pork chop — the Spanish acorn-fed breed, the best pork in the world by most reckonings, and a cut that almost never appears on an American steakhouse menu.

The caviar

The service runs deeper than most steakhouses attempt: Beluga, Kaluga, Amber Osetra and Siberian sturgeon, priced accordingly. Foie gras Rossini is available as a steak enhancement, alongside king crab, king crab Oscar, half a lobster and truffle butter.

The rest of the board

Black Angus filet mignon at 6oz and 10oz, a 16oz Prime strip, a 16oz Prime bone-in Delmonico and an Australian rack of lamb. Sauces are a flat four dollars — bordelaise, au poivre, béarnaise, chimichurri or the house tiger sauce.

As published on the Oregon Grille’s own menu, August 2026: 36oz Wagyu tomahawk for two $220, 34oz dry-aged porterhouse for two $170, 18oz dry-aged Prime cowboy ribeye $94, 16oz Prime bone-in Delmonico $89, 16oz Prime strip $75, 12oz dry-aged bison ribeye $74, 10oz Black Angus filet mignon $69, 14oz Iberico pork chop $62, Australian rack of lamb $59 and the 6oz filet mignon $48. Caviar runs from $110 for Amber Osetra or Siberian sturgeon to $400 for Beluga. King crab Oscar adds $30.
