Why Prime29 made the SteakMap list

The name is the aging period. Prime29 dry-ages for 29 days and hand-trims in house, and put the number on the door — which is a level of commitment most steakhouses would not risk, because it means you can hold them to it.

It is also, as far as SteakMap has found, the only Certified Halal steakhouse in Michigan serving USDA Certified Prime beef.

Why the halal certification matters

Metro Detroit has one of the largest Arab American populations in the country, and for a great many diners here a serious steakhouse has simply not been an option — not because none existed, but because none were certified.

Prime29 solves that without compromising on grade. The beef is USDA Certified Prime, the top grade the USDA awards, and it is dry-aged for four weeks before anyone cuts it. That combination is genuinely rare and it is the single most useful fact on this page.

The board

Served a la carte from the Butcher’s Table: filet mignon at 8oz and 12oz, a 14oz New York strip, a 16oz ribeye, and a 24oz Wagyu tomahawk carrying the same 29-day dry age and in-house trim.

Enhancements include Oscar style, bone marrow butter, a compound butter — and Zip Sauce, which deserves a note of its own.

A word about Zip Sauce

Zip sauce is a Detroit invention and effectively unknown outside southeast Michigan: a dark, buttery, savory sauce built on beef drippings and spices, poured over a steak at the table. It has been a metro Detroit steakhouse fixture since the 1940s.

If you are visiting from out of state, order it once. It is the most regionally specific thing you can eat on a Michigan steak, and no amount of national chain expansion has carried it beyond this metro.

Prime29 does not publish prices on its online menu, so SteakMap has no verified figures to quote. Steaks are a la carte, so plan for sides separately.
