Why Carnivores made the SteakMap list
St. Robert sits next to Fort Leonard Wood, and Carnivores has built a steakhouse that suits the town without cutting the beef short. The steaks are hand-cut and aged in house, the fries are cooked in beef tallow, and the top of the board is a 24oz wagyu.
Tallow fries are the detail worth noticing. Almost every restaurant switched to vegetable oil decades ago on cost; frying in rendered beef fat is a deliberate, more expensive choice, and it is the reason the fries taste like they used to.
The Warrior Steaks
The core board is short and unpretentious. A 14oz aged Carnivore ribeye is the house cut, hand-cut and aged, served with a loaded baked potato and a side salad. Beside it sits a 14oz Samoan ribeye — the same cut in a pineapple-soy marinade brightened with citrus, which is a genuine Pacific Island preparation and not something you find on many Missouri menus.
A 16oz Champions Cut sirloin comes with the tallow fries. Below that, sirloin medallions au poivre and a plain 8oz hand-cut sirloin, both under thirty-five dollars — which is what a steakhouse in a garrison town ought to look like.
The Elite Cut
At the top of the menu is the Wagyu Shield, a 24oz cut, listed under its own Elite Cut heading. It is more than double the price of anything else on the board, which is the correct way to present a steak like that — separated, so nobody orders it by accident.
What to expect
Enhancers are cheap and good: bone marrow butter, Brazilian chimichurri, au poivre sauce, grilled onions, a shrimp skewer. Sides are a flat eight dollars each and include smoked gouda mac and cheese, sweet chili brussels sprouts and a twice-baked potato listed as while-supplies-last.

As published on Carnivores’ own menu, August 2026: the 24oz Wagyu Shield $112, 14oz Samoan ribeye $46, 14oz aged Carnivore ribeye $43, 16oz Champions Cut sirloin $40, sirloin medallions au poivre $32 and the 8oz sirloin $27. Sides are $8, bone marrow butter $8 and the shrimp skewer $9.
