Why The Barn made the SteakMap list

The Barn buys from Allen Brothers, and puts the name on the menu next to the cuts that come from them. That is worth understanding: Allen Brothers is the Chicago purveyor that supplies a large share of America’s serious steakhouses, and naming your supplier is a commitment — it invites the comparison rather than hiding behind adjectives.

The menu also states the basics plainly: beef raised in the Midwest, aged, and hand cut in house.

The signature cuts

The board splits into standard steaks and a Signature Cuts section of bone-in steaks and chops hand-selected by the kitchen. That is where the interesting beef sits: the Allen Brothers long bone ribeye at 22oz, a dry-aged Kansas City strip, and a 12oz bone-in filet.

The Kansas City strip is the one to notice. It is a bone-in strip loin — the same muscle as a New York strip with the bone left on — and dry-aging it is a deliberate choice, since the bone makes the trim loss worse. Very few Ohio kitchens carry a dry-aged strip at all.

The rest of the beef

Prime top sirloin at 10oz, an Allen Brothers New York strip at 12oz and a Prime New York strip at 14oz, a Prime ribeye at 14oz, filet mignon at 8oz and 10oz, and twin 8oz filets offered either bacon-wrapped or brie-topped. Prime rib is carved to temperature in a Queen Cut at 12oz and a King Cut at 16oz.

Steaks come with a choice of broccoli, green beans with pecans, steak fries or a baked potato, and house-made steak sauce is available by request — a nice touch on a menu confident enough not to put it on the table by default.
