Why Tucci’s made the SteakMap list

Tucci’s is an Italian kitchen in Dublin that takes its beef seriously enough to name the supplier and the aging period on the menu: Allen Brothers, the Chicago purveyor operating since 1893, with 21-day dry aging and hand-cutting.

Naming a supplier is an accountable thing to do — it invites the comparison rather than hiding behind adjectives — and Allen Brothers supplies a large share of America’s serious steakhouses. The AB Prime cuts here are labeled as such on the board.

Three tiers of wagyu

The unusual thing about this menu is that wagyu appears at three different price points rather than one showpiece. There is a 6oz wagyu filet at the top, a 10oz American Kobe sirloin in the middle, and a wagyu burger with fontina, crispy pancetta and onion jam at the bottom.

The American Kobe sirloin is the value play. Sirloin carries wagyu marbling well without the tenderloin premium, and at this price it is one of the more accessible ways to eat properly marbled beef in the Columbus area.

The cuts

Filet mignon at 6oz and 10oz, twin 8oz filets, a 10oz AB Prime flat iron, a 14oz AB Prime New York strip, a 14oz AB Prime ribeye and a 32oz tomahawk ribeye. Slow-cooked prime rib with rosemary au jus appears Friday and Saturday nights only.

The flat iron is worth a mention — it is cut from the shoulder, deeply flavored and usually the cheapest good steak on any menu that carries it. In AB Prime it is a genuine bargain here.

All steaks come with steakhouse butter and a side. Beyond beef there is a 12oz Berkshire bone-in pork chop with fig agrodolce and Australian lamb chops with mint chimichurri, plus a full Italian menu of pizza, lasagna bolognese and fettuccine alla vodka.
