Why 1587 Prime made the SteakMap list
1587 Prime names the ranch behind every single cut. Not the grade, not the region — the ranch, and the town it sits in. SteakMap has not found another menu in the country that does this across the whole board.
The Prime cuts read like a map. The 6oz petite filet comes from Windsor Ranch in Windsor, Missouri — an hour down the road. The 16oz bone-in strip is Foote Ranch, Manhattan, Kansas. The 18oz Delmonico is Double R Ranch, Loomis, Washington.
The wagyu is just as specific: an 8oz filet from Snake River Farms in Melba, Idaho, a 6oz Japanese A5 New York strip from Kagoshima Prefecture, and a 16oz boneless ribeye from Black Opal in Victoria, Australia.
Sourcing at that level of detail is a standing invitation to be checked, which is the point. It is also genuinely useful — you can taste a Missouri ranch against an Idaho one at the same table.
The A5, and how to start
Before the steaks there is A5 Tajima wagyu from Kagoshima at BMS 12, served with whisky-barrel-aged soy air and triple inferno salt. BMS 12 is the very top of the Japanese marbling scale — there is nothing above it — and serving it as a small shared plate rather than a steak is the right call for beef that rich.
The rest of the opening board leans playful: wagyu pastrami with cornichons and horseradish, 1587 meatballs in arrabbiata, lobster rolls with osetra caviar, a black truffle grilled cheese with tomato soup, and togarashi fried chicken with a honey trio.
The room
This is the Kansas City steakhouse opened by Travis Kelce and Patrick Mahomes — the name comes from their jersey numbers, 15 and 87. It would have been easy to trade on that and buy commodity beef. The ranch-by-ranch sourcing says somebody decided not to.
