Why the Golden Ox made the SteakMap list

The Golden Ox sells a bone-in dry-aged Kansas City strip and describes it on the menu as “the steak that was born here!” That is not marketing. The Kansas City strip takes its name from this city’s stockyards, and the Golden Ox sits in the West Bottoms where those stockyards were.

Ordering the KC strip here is about as close as American steak gets to drinking wine in the village it came from.

The Drover

The showpiece is a 21-day dry-aged bone-in ribeye offered in three sizes, each with its own name: the 30oz Buckaroo, the 36oz Wrangler and the 42oz Hoss. Forty-two ounces of dry-aged bone-in ribeye is a genuinely serious piece of meat — a table order, not a dinner.

Alongside it sits a 28oz dry-aged porterhouse, described on the menu as the best of both worlds, which is exactly what a porterhouse is: strip on one side of the bone, filet on the other.

Breed and cut, named

The rest of the board is unusually specific about what the beef actually is. The Manhattan is a 14oz Akaushi New York strip — Akaushi being the Japanese Red Wagyu breed, leaner than the black wagyu most menus mean and with a different, more savory character. The American Royal is a 17oz Midwest Angus ribeye. The Ox Top Cut is a 6oz Midwest Prime sirloin.

There is also an Arrachera — a 10oz marinated skirt steak, the Mexican preparation — and an 8oz flat iron the menu simply calls “8 oz. of Flavor.” Both are the kind of cut a confident kitchen puts on a steakhouse menu and a timid one leaves off.

Duroc pork chops are $32 and the half-slab of hickory-smoked baby backs $26.
