Why Delmonico’s made the SteakMap list

Delmonico’s prints the grade next to every steak, and it does not pretend they are all the same. Some cuts are Certified Angus Beef; others are USDA Prime; the menu says which is which and prices them accordingly.

That is more useful than it sounds. Most steakhouses either serve one grade throughout or stay vague enough that you cannot tell. Here you can see the ladder directly: an 8oz center-cut filet in CAB, a 10oz thick-cut filet in Prime; a 14oz New York strip in CAB, a 16oz thick-cut strip in Prime. The 16oz Delmonico ribeye is CAB and the 24oz bone-in cowboy ribeye is Prime.

Order two at the same table and you learn what the grade difference actually tastes like, which is a more valuable evening than any single steak.

The wagyu

The one to notice is an 8oz wagyu sirloin from Rangers Valley. Rangers Valley is a New South Wales feedlot with a serious reputation for long-fed crossbred wagyu, and naming the producer — rather than writing “wagyu” and stopping — is the kind of specificity SteakMap rates.

Wagyu also turns up as meatballs with whipped herb ricotta, which is a smart use of well-marbled trim.

What to expect

Signature presentations sit alongside the steaks: Oscar with crab, asparagus and béarnaise; Christopher with shrimp; a mushroom and onion smother; blackened with blue cheese; a garlic parmesan crust. Sauces are béarnaise, truffle butter, cabernet demi-glace, bourbon peppercorn and horseradish crème fraîche.

The chilled seafood tower comes in two sizes with Maine lobster tails, blue point oysters, gulf shrimp and jumbo lump crab. There is a chef’s cut of the day at market price for anyone who wants to be surprised.
