Why Morton’s Cleveland made the SteakMap list

Morton’s is a national name, and the reason this room is on our list is a section of the menu most chains would never bother with: Butcher Cuts.

That is where the 14oz dry-aged ribeye sits, alongside an 8oz Prime bavette steak frites. Bavette is the flap cut off the bottom sirloin — loose-grained, deeply beefy, and a cut you normally only see on menus written by chefs rather than by corporate. Finding it on a chain menu in Cleveland is a genuine surprise, and it is the cheapest good steak in the building.

Three tiers of beef, clearly separated

The menu is organized in a way that makes the buying decision easy, which SteakMap rates highly. Midwest Beef covers the conventional cuts: a petite filet, an 8oz filet, a 16oz ribeye, a 16oz New York strip and a 20oz bone-in ribeye. Butcher Cuts holds the dry-aged ribeye, the bavette, a 12oz center-cut filet, a 16oz “Proprietary” Prime cajun ribeye and a 16oz heritage pork chop.

Then there is a dedicated Wagyu Features tier — a 7oz wagyu filet mignon and a 10oz “baseball cut” top sirloin. The baseball cut is a thick round-shouldered sirloin that holds a rare center better than a flat steak; pairing it with wagyu marbling is a smart, unshowy choice.

For a table there is a 36oz tomahawk ribeye.

What to expect

Morton’s prints calorie counts next to everything, which is either useful or unwelcome depending on your evening. The appetizers lean into the same beef program — wagyu meatballs, wagyu beef dumplings — and the raw side runs to an Ocean Platter of oysters, cold-water lobster tail, shrimp, crab cocktail and seared ahi in two sizes.
