Why Cleveland Chop made the SteakMap list

Cleveland Chop does something most steakhouses avoid: it sells the same cut at three different sizes and lets you decide how much steak you actually want.

The filet comes as a 6oz Petite, an 8oz Standard and a 10oz Executive. The New York strip runs 14oz in the standard grade and 16oz in USDA Prime. The ribeye is boneless at 14oz or bone-in at 20oz. That is a menu written for the diner rather than for the kitchen’s convenience, and it is rarer than it sounds — most rooms pick one size per cut and make you live with it.

The grades, stated plainly

What makes the sizing useful is that the menu also tells you the grade. The boneless ribeye and the 16oz strip are named as USDA Prime; the 14oz strip is not, and is priced accordingly. Being explicit about which cuts carry the top grade and which do not is a small honesty that a surprising number of steakhouses skip.

There is also a 10oz wagyu top sirloin — a sensible way to put wagyu on a menu, since the sirloin carries the marbling without the price of a wagyu ribeye.

What to expect

Every steak comes with a choice of side: white cheddar mashed potato, baked potato, Brussels sprouts, steak fries or garlicky spinach. Any cut can be prepared as a house feature — Oscar with jumbo lump crab and béarnaise, au poivre with a three-pepper crust and cognac cream, or bleu with Worcestershire cream.
