Why Gordon Ramsay Steak made the SteakMap list
Celebrity-named restaurants earn a certain amount of skepticism, and SteakMap applies it. This one is on the list because the menu is doing real cooking rather than trading on the name.
The tell is the smoked wagyu beef tartare, served with a truffle egg emulsion, coriander vinaigrette and manchego. Tartare is a technique dish — it exposes the quality of the beef completely, since there is no heat to hide behind — and smoking it before serving is an extra step nobody takes for show.
The same goes for the Kurobuta pork belly. Kurobuta is Berkshire pork, the heritage breed, named specifically rather than sold as generic pork; it comes crisped over creamy polenta with a bourbon-maple glaze and a pear fennel salad.
The kitchen’s hand
The rest of the opening board keeps the same standard. Lobster risotto is built on a butter-poached tail with truffle risotto and crispy onions. The lump crab cake comes with green goddess, avocado mousse and apple relish. There is a fried lobster maki roll with tobiko roe, chili aioli and wasabi puree — not a dish most steakhouses would attempt.
The wedge salad is done properly: iceberg with roasted cherry tomatoes, pickled red onion, blue cheese dressing, glazed bacon and chives. And there is a scotch egg on the menu, which is the most British thing in Missouri.
The sides
Worth planning for, because they are a la carte and generously composed: loaded baked potato with smoked gouda béchamel, creamed corn with parmigiano reggiano and mascarpone, potato purée with crème fraîche, truffle fries, grilled asparagus with brown butter béarnaise, and broccolini with garlic confit and chimichurri.
