Why Polaris Grill made the SteakMap list
Polaris Grill states its aging period on every steak, and it is the same on all of them: 21 days. That consistency is the point. A menu that ages the ribeye and says nothing about the filet is telling you something; a menu that commits to one number across the board is telling you something else.
It is also honest about grade in a way that deserves credit. The menu names its beef as USDA Choice and Angus Choice rather than dressing it up — and then ages it for three weeks, which is precisely what Choice-grade beef needs. Aging develops flavor and tenderness that Choice does not arrive with; spending it on Prime is arguably less useful. This is the right technique applied to the right product.
The cuts
Four steaks, all 21-day aged: a 16oz Angus Choice bone-in ribeye, an 8oz USDA Choice filet mignon, a 12oz USDA Choice New York strip and a 12oz USDA Choice Angus delmonico. Each arrives with demi-glace, dauphinoise potatoes and vegetables, and includes a topping from the list — béarnaise, bacon chive butter, chimichurri, or a wild mushroom and onion ragout.
Including the sides and a topping in the steak price is unusual at this level; most Columbus rooms charge separately for both.
Menu prices
As published on Polaris Grill’s own menu, August 2026: the 16oz bone-in ribeye $63, with the 8oz filet mignon, 12oz New York strip and 12oz delmonico all at $49. Upgraded toppings run $3 to $8 extra, and a house salad adds $8.
