Why J. Gilbert’s made the SteakMap list

J. Gilbert’s cooks over wood, and that single decision separates it from almost every other steakhouse in Columbus. Nearly all of them broil or use a flat-top; a wood fire puts smoke and a different kind of char into the crust, and it is harder to run consistently, which is why so few kitchens bother.

The menu is direct about sourcing too: Midwestern-raised USDA Prime aged and Certified Black Angus beef. Two grades, both named, aged before cutting.

The cuts

Six steaks, all served with a choice of two sides — which is more generous than most rooms at this level, where sides are strictly a la carte and add twenty dollars to the bill.

A 10oz top sirloin, center-cut filet mignon at 6oz and 8oz, a 14oz Kansas City strip, a 14oz ribeye and an 18oz bone-in ribeye they call the Cowboy Cut.

The Kansas City strip is the one worth noticing. It is a strip loin with the bone left on, and over a wood fire the bone does real work — insulating the meat closest to it so the steak cooks unevenly in the good way, with a rarer band along the bone.

Beyond the steaks

The mesquite grill runs through the rest of the menu: a mesquite-grilled chicken sandwich, wood-grilled ribs with Kansas City barbecue sauce, and a prime rib dip with hand-carved beef, provolone, au jus and creamy horseradish. Slow-roasted prime rib is served with a salted baked potato.

There is a wagyu burger with au poivre mayo, shallot jam, gruyère and sweet potato fries, plus an Aussie lamb rack and a short rib gnocchi with parmesan horseradish cream.

Gilbert’s own menu, August 2026: 18oz bone-in ribeye Cowboy Cut $68, 14oz Kansas City strip $62, 14oz ribeye $62, 8oz center-cut filet mignon $54, 6oz center-cut filet mignon $46, 10oz top sirloin $38, wood-grilled ribs $40, short rib gnocchi $34, pan-roasted chicken $32, 10oz prime rib $28, wagyu burger $25 and the steak and frites $24. Steak extras run $4 for the butters, $12 to $18 for shrimp, crab cake or scallops.
