Why Chart House Prime made the SteakMap list
Annapolis is a crab town, and Chart House Prime sits on the water. It would have been entirely reasonable for the beef here to be an afterthought. Instead the menu carries Snake River Farms American Wagyu in two forms, named by producer.
The one to order is the Eye of the Ribeye — a 10oz center cut described on the menu as the filet of the ribeye. That is the spinalis, the crescent of muscle wrapping the outside of a ribeye and widely considered the best-eating piece on the animal. Almost no kitchen separates it out; doing it in Snake River Farms wagyu is a genuinely rare offer.
For a table there is a 32oz Snake River Farms bone-in Wagyu tomahawk, alongside a 32oz Prime porterhouse.
The prime rib, in three cuts
The house also runs herb-crusted, slow-roasted prime rib in three named weights — the Chart House Cut at 10oz, the Captain Cut at 14oz and the Callahan Cut at 18oz. Naming your portions rather than numbering them is a small thing that suggests a room with its own history.
Beyond that: a 16oz Prime New York strip, and a filet steak frites of sliced 8oz sirloin with pommes frites and a brandy peppercorn sauce, which is the value order on the board.
What to expect
All the signature cuts are served a la carte. The enhancements lean into the location, as they should in Annapolis — crab Oscar, king crab, lobster tail and a crab cake, several at market price. There is also a bone marrow butter luge, which is exactly as indulgent as it sounds.
Roasted lamb chops come with tri-color carrots, parsnip purée, pistachio and a pomegranate mint jus.
