Why Prime Steakhouse made the SteakMap list
Prime Steakhouse heads its board Dry Aged Steaks — not one aged special among conventional cuts, but the whole section — and then carries two chef’s cuts that almost nothing else in Michigan offers.
The Zabuton and the Coulotte
The 10oz Wagyu Zabuton is the Denver cut, taken from the chuck under the shoulder blade. It is one of the most marbled muscles on the animal and the fourth most tender, but it sits in a primal most kitchens grind, so it rarely reaches a menu. In wagyu it is an unusually rich piece of beef at a fraction of a ribeye’s price.
The 10oz Prime Coulotte is the top sirloin cap — picanha, if you have eaten Brazilian — and the menu is honest that it is the lean option. At its price it is the best value on the board and the most interesting thing a curious diner can order.
Carrying both cuts says the kitchen is breaking down whole primals rather than ordering portioned steaks, because neither arrives in a box.
The dry-aged board
The tomahawk changes — the menu tells you to ask the server about tonight’s selection, which is what you want to read when a restaurant is genuinely aging its own beef rather than reciting a fixed list. Alongside it a 32oz Prime porterhouse cut from the short loin, a 20oz Prime Delmonico, a 10oz barrel-cut filet, a 6oz petite filet and a 16oz Prime New York strip.
All served with a choice of two sides, which at these prices is more generous than most.
Beyond beef
The Prime Seafood Boil is the outlier worth knowing about: lobster tail, shrimp, crab claws, andouille, Yukon potatoes and sweet corn in a saffron lobster broth. There is also a 10oz bone-in smoked pork chop with a seasonal chutney, and butter-poached colossal king crab at market.

As published on Prime Steakhouse’s own menu, August 2026: Prime seafood boil $120, 20oz Prime Delmonico $65, 10oz barrel-cut filet $63, 16oz Prime New York strip $56, 6oz petite filet $44, 10oz Wagyu Zabuton $42, smoked pork chop $32, wild-caught Chilean salmon $28 and the 10oz Prime Coulotte $28. The dry-aged tomahawk, 32oz Prime porterhouse and colossal king crab are market price.
