Why Fleming’s Akron made the SteakMap list

Fleming’s is a national name, and national names usually get a polite nod on lists like this. This one earns its place on the wagyu program alone.

The menu carries Japanese A5 wagyu strip from Kagoshima Prefecture, graded BMS 10-12 — the highest verified marbling score SteakMap has recorded anywhere in Ohio. It is served rare on a hot stone with miso glaze, grated horseradish and artisanal salt, in a 4oz portion, which is the honest way to sell beef that rich. Alongside it sits Australian Carrara wagyu at BMS 8-9, in both a 14oz strip and an 8oz filet, for anyone who wants the marbling without the intensity.

There is also a 16oz dry-aged ribeye on the menu, which puts this room in a small group in Ohio offering both dry-aged beef and graded wagyu under one roof.

The cuts

Everything else is USDA Prime, and the menu states the reason plainly: less than ten percent of beef earns that rating. The range runs a 16oz Prime New York strip, a 20oz Prime bone-in ribeye, a 14oz Prime petite bone-in ribeye, an 11oz filet mignon, a 14oz bone-in filet, an 8oz petite filet and a 35oz Prime tomahawk.

The one to ask about is the 9oz spinalis ribeye cap, listed as limited availability. The spinalis is the outer muscle of the ribeye and the single best-eating piece of the animal; most kitchens fold it into the ribeye rather than selling it separately.
