Why City Square made the SteakMap list

City Square runs Certified Angus Beef throughout and buys locally where it can — the mushrooms are Killbuck Valley, from a grower in the same county, and the pork chop is named as Ohio pork on the menu.

That matters more in Wooster than it would in a city. A town of twenty-six thousand supporting a steakhouse that sources this deliberately is doing something worth driving for, and Certified Angus Beef is itself an Ohio program — the brand was founded and is still headquartered in Wooster, about a mile from the restaurant.

The cuts

Eight steaks and chops, each with its weight stated. A 20oz bone-in ribeye anchors the top. Below it a 14oz Delmonico, an 8oz center-cut filet mignon, a 12oz center-cut New York strip, a 5oz petite filet and a 10oz butcher-cut top sirloin. There is a New Zealand rack of lamb with rosemary-port demi-glace and a 12oz bone-in Ohio pork chop.

The butcher-cut top sirloin at the bottom of the board is the value order — CAB sirloin, ten ounces, at less than half the price of the ribeye.

Every steak comes with the house salad, a choice of potato and fresh bread, which makes the pricing more honest than it first looks.

What to expect

The toppings list leans local: City Square Style is sautéed Killbuck Valley mushrooms with caramelized onions and garlic butter. Oscar style adds crabmeat, béarnaise and asparagus. There is a peppercorn-crusted au poivre with cognac cream, a blue cheese crust and a rosemary-port demi-glace.

The surf and turf pairs an 8oz Certified Angus Beef filet with a 4oz lobster tail and lobster cream sauce. If you want beef at lunch, the CAB steak salad puts top sirloin over mixed greens with Ohio bacon, candied pecans and blue cheese.
