Why Capital Prime made the SteakMap list
Capital Prime dry-ages a New York strip for 60 days, and describes it on the menu the way someone who has actually tasted it would: tender yet firm, with a delicious umami flavor.
Sixty days is deep. Past about six weeks the beef stops merely concentrating and starts developing genuinely funky, nutty notes — the umami the menu is pointing at. It is a divisive thing to serve and an expensive one to hold, and it is the reason this Lansing room outranks a lot of bigger-city steakhouses.
The Prime board
Everything at the top is USDA Certified Prime and the weights are stated. A 24oz Prime porterhouse, split between strip and filet. An 18oz center-cut bone-in ribeye, which the menu calls Capital Prime’s version of the traditional cowboy cut. A 13oz bone-in filet mignon — unusual, since tenderloin is normally sold boneless. And a 38oz French-trimmed Prime tomahawk at market price.
Japanese A5 wagyu is offered as a chef’s cut, also at market, served with two sides.
Shared, off the bone
The detail worth knowing: for fourteen dollars extra, any Prime steak can be served as a shared dinner for two — sliced off the bone and plated with two portions of roasted garlic and chive whipped potatoes and marinated grilled asparagus.
That is a genuinely good idea. Big bone-in cuts eat better sliced and rested, and most steakhouses either refuse to split them or charge a plating fee that discourages it.
The everyday cuts
Below the Prime section sits a more accessible board: a 14oz ribeye, a 12oz New York strip, and filet mignon as a chef’s choice 8oz or a 6oz petite.

As published on Capital Prime’s own menu, August 2026: 24oz Prime porterhouse $100, 18oz Prime bone-in ribeye $95, 60-day dry-aged New York strip 14oz $88, 13oz Prime bone-in filet mignon $85, 8oz filet mignon $54, 14oz ribeye $52, 6oz petite filet $46 and the 12oz New York strip $42. The 38oz Prime tomahawk and the Japanese A5 are market price, and the shared dinner for two adds $14.
