Why Single Barrel Social made the SteakMap list
Single Barrel Social grills over Michigan hardwood and treats each steak as a composed dish rather than a slab with a sauce on the side. It is the most inventive steak menu in the state outside Detroit.
The clearest example is the Coffee Filet: a 7oz tenderloin under a coffee crust, with horseradish-parsnip mash, beurre rouge and pickled cherries. Coffee grounds char into a bitter-sweet crust that suits lean beef, and pairing it with pickled cherries is the kind of decision a cook makes rather than a menu writer.
Three kinds of wagyu, three treatments
Japanese A5 Kagoshima wagyu strip arrives as a 5oz portion with lyonnaise potatoes and red wine demi — the honest size for beef that rich. Blade & Brassica is a 10oz American Wagyu flat iron with broccolini, cashew satay, sesame and preserved lemon, which is a genuinely unusual way to serve wagyu and works because the flat iron has structure to stand up to it.
Even the burger is wagyu-adjacent: two 4oz patties house-ground from a ribeye, strip and sirloin blend. Grinding three primals for a burger is a butchery decision, and it is the tell that this kitchen breaks down its own beef.
Zip sauce, properly placed
The Steak & Potatoes is a 10oz sirloin grilled over Michigan hardwood with pomme puree and zip sauce — the dark, buttery, beef-drippings-and-spice sauce invented in metro Detroit in the 1940s and effectively unknown outside southeast Michigan. Serving it on the most straightforward steak on the menu is the right call.
The Harvest Ribeye is a 16oz Del Monaco cut with orange-braised heirloom carrot, curry carrot butter and yellow squash hummus, and the NY Strip Oscar is a 14oz hardwood-grilled strip with grilled asparagus, béarnaise and butter-poached crab.
