The downtown Ann Arbor location

This one sits at 314 S Fourth Avenue, a block off Main Street in the middle of downtown Ann Arbor — walking distance from the Michigan Theater, the Kerrytown blocks and the north edge of campus. That location does most of the work here. It is the default room in this town for a graduation dinner, a recruiting visit or the night before a home game, and it books accordingly on autumn Saturdays.

What the kitchen does

Ruth’s Chris runs USDA Prime beef, hand-cut and custom-aged, through a broiler that hits 1,800°F. That kind of heat sears the outside fast enough that the interior never has time to overcook, which is the entire argument for the method. The steak then lands on a plate heated to roughly 500°F with butter, which is where the sizzle comes from.

The cut worth ordering is the 19oz bone-in New York strip — the one the company’s own menu singles out as its favorite. The 26oz Cowboy Ribeye, bone-in and heavily marbled, is the other serious order. Sides are à la carte and sized to share.
