Why The Reserve made the SteakMap list
There is a 45-day dry-aged New York strip on the menu in downtown Brighton, and that is not a thing small-town Michigan main streets usually have.
Forty-five days is well past the commercial standard of 21 to 28. At that length the beef has lost real moisture, the exterior crust gets trimmed away as waste, and what is left tastes nutty and almost blue-cheese funky. It is an expensive way to sell a steak and only kitchens that mean it bother.
The Butcher’s Box
The Reserve splits its board in two. The Butcher’s Box is USDA Prime: a 7oz prime filet mignon, the 45-day dry-aged 14oz New York strip, and a 40oz tomahawk ribeye for two.
Below that sit the Classic Cuts — chef-selected rather than Prime-graded, and priced accordingly: an 8oz center cut filet, a 16oz ribeye and a 14oz New York strip. Splitting the menu by grade instead of blending everything into one list is an honest way to do it.
Zip sauce and beef tallow
This is a Michigan steakhouse and it does not hide it. Zip sauce is a $3 add-on to any steak, and it also shows up inside the beef Wellington bites and on the hanger steak frites.
The most quietly excellent thing on the menu is the beef tallow candle — warm artisan bread with whipped butter and slowly melting beef tallow you spread yourself. Rendering your own tallow means the kitchen is trimming its own fat, which is a small tell about everything else.
The morel mushroom bisque uses Michigan morels, a genuinely seasonal ingredient this state is known for.

From the Reserve’s summer 2026 menu: tomahawk ribeye for two $150, dry-aged 45-day New York strip $89, prime filet mignon $74, ribeye 16oz $71, New York strip 14oz $67, steakhouse plate with center cut filet $56, center cut filet 8oz $48 and hanger steak frites $48. Lobster tail adds $36, crab béarnaise $14, truffle butter or bleu cheese crust $5 each, zip sauce $3.
