Why Sam’s made the SteakMap list

Sam’s does one thing that almost no steakhouse does anymore: it brushes every steak with a house sauce, says so on the menu, and tells you what is in it. Sam’s Signature Sauce is a blend of onion, garlic, wheat and soy, applied to the steak as it grills.

That is a real cooking decision, and a divisive one. Soy and garlic add glutamates that read as savory depth and help build crust; purists will tell you a good steak needs salt and nothing else. Sam’s has picked a side and committed to it, which is more interesting than a menu that hedges.

The big cuts

The board tops out at a 40oz bone-in tomahawk — a table steak in the proper sense — with a 24oz porterhouse and a 16oz cowboy bone-in ribeye beneath it.

Prime rib is offered in three weights, 14oz, 18oz and 24oz, and the menu suggests asking for it French style: slightly grilled, brushed with Sam’s sauce and served with a creamy horseradish mousse. Prime rib that has been kissed by a grill is a genuinely different dish from the usual slow-roasted slab, and it is worth ordering that way.

The composed steaks

Signature entrées come with a mixed green salad and a baked potato, which is a more complete plate than most rooms at this price. The Grantwood Filet is a 9oz filet crowned with lobster claw and béarnaise. The Tenderloin Louisiana puts two jumbo gulf shrimp in a creole butter over the same cut. The Peppercorn Strip is a 14oz rolled and encrusted in peppercorn with a brandy peppercorn sauce.

The surf and turf is the maximalist order: a 16oz cowboy ribeye blackened and grilled, a 9oz lobster tail, and a crab-stuffed mushroom on the side.
