Why Fleming’s St. Louis made the SteakMap list

Fleming’s carries the most serious wagyu list in St. Louis, and it is specific enough to be checked.

The top of it is Japanese A5 wagyu strip from Kagoshima Prefecture at BMS 10-12, served rare on a sizzling hot stone with miso glaze, grated horseradish and artisanal salt. BMS 10-12 is near the ceiling of the Japanese marbling scale, and a 4oz portion is the honest way to sell it — a full steak of that richness defeats most people halfway through.

Below it sits Australian Carrara wagyu at BMS 8-9, in both a 14oz strip with black garlic sauce and an 8oz filet mignon. Offering two marble scores side by side is the useful part: you can taste what the grade actually buys you.

The dry-aged ribeye, and the spinalis

There is a 16oz dry-aged ribeye on the board, which puts this room among the small group in Missouri offering both dry-aged beef and graded wagyu under one roof.

The cut to ask about, though, is the 9oz spinalis ribeye cap, listed as limited availability and described on the menu as “the greatest steak you never ate.” The spinalis is the crescent of muscle wrapping the outside of the ribeye — the best-eating piece on the animal — and almost every kitchen folds it into the ribeye rather than selling it separately.

The Prime board

Everything else is USDA Prime, and the menu states why that matters: less than ten percent of beef earns the rating. The range runs a 16oz Prime New York strip, a 20oz Prime bone-in ribeye, a 14oz Prime petite bone-in ribeye, an 11oz filet mignon, a 14oz bone-in filet, an 8oz petite filet and a 35oz Prime tomahawk.
