Why Ruth’s Chris made the SteakMap list
Ruth’s Chris is a national chain, and it is on this list on merit rather than reputation. The whole board is USDA Prime, described on the menu as tender corn-fed Midwestern beef, and the specialty cuts go places most chain menus will not.
The one to know about is the 19oz bone-in New York strip, which the menu identifies as the founder’s favorite. Bone-in strip is a harder cut to cook evenly and a harder one to sell than a filet; keeping it on the board because Ruth Fertel liked it is the kind of institutional stubbornness that usually correlates with good beef.
The big cuts
Three steaks here are built for sharing or for serious appetite. The 40oz Prime tomahawk ribeye is the largest. The 40oz porterhouse for two gives you the strip and the filet on one bone. And the 22oz bone-in Cowboy Ribeye sits between them.
There is also a 16oz bone-in filet — unusual, since tenderloin is normally sold boneless, and worth ordering if you want the tenderness with some of the flavor the bone contributes.
The rest of the board
The classic filet is an 11oz center cut; the petite is 8oz. The New York strip is 16oz, the ribeye 16oz, the T-bone 24oz. Beyond beef there are three extra-thick lamb chops marinated overnight with fresh mint, and a 16oz double bone-in Berkshire pork chop.
The house method is the famous part: steaks arrive on a plate heated to 500 degrees, still sizzling in butter. It is theatrical, and it also keeps the steak hot through a long dinner, which is the actual point.
