Why Chop Shop made the SteakMap list
A 45-day dry-aged bone-in ribeye in a lakeshore town of 34,000 people is the kind of thing that makes a directory like this worth keeping.
Chop Shop Primehouse sits on Ottawa Beach Road near Lake Macatawa, and its board is short in the way confident steak menus are — five cuts, each one doing a specific job.
The board
The headliner is the 24oz Dry Aged Cowboy Cut, a bone-in ribeye aged 45 days. That is roughly double the standard commercial window. Beef held that long loses a serious amount of weight to evaporation and trim, and the payoff is the concentrated, nutty, faintly funky flavor that dry-aging fans chase.
Next to it is a 16oz Wagyu Black Strip and a 32oz USDA Prime tomahawk. The 16oz Delmonico is described as a rich, marbled short loin cut — a name that means different things at different restaurants, and here it means the marbled end.
The filet mignon is house-cut tenderloin, offered at 6 or 10 ounces. House-cut means somebody in that kitchen is breaking down whole tenderloins rather than opening a box of portioned steaks.
Every steak on the menu is marked gluten free, which is a small courtesy most steakhouses never bother to print.
