Why Eddie Merlot’s made the SteakMap list

Eddie Merlot’s names its wagyu producers, and it names three of them. That is the most specific beef sourcing SteakMap has found on any menu in Ohio.

There is a Wagyu MS9+ filet mignon from Rangers Valley in Australia, offered at 6oz and 8oz. An MS7/8+ 16oz ribeye, also Rangers Valley. And an 18oz American wagyu bone-in strip from Snake River Farms in Idaho.

Those marble scores are checkable numbers, not adjectives. MS9+ is deep into premium Australian wagyu territory; MS7/8 is a step below and eats less richly, which is exactly why offering both is useful. Naming Rangers Valley and Snake River Farms — two of the best-regarded producers in their countries — invites you to compare rather than take the word wagyu on faith.

Hand-cut, aged 28 days

The house steaks are hand-cut in house and aged a minimum of 28 days, and the menu says so at the top of the section rather than burying it. Everything in that group is USDA Prime: a 12oz and 16oz New York strip, a 16oz ribeye, a 22oz bone-in Cowboy Cut, and filet mignon at 8oz and 12oz.

The Prime Bourbon Ribeye is the house variation — a 16oz ribeye with bourbon, brown sugar and onion straws.

Beyond beef

A 6oz bison filet sits on the same board, which is rarer than it should be; bison is leaner and more mineral than beef and needs a cook who will pull it early. There is a rack of lamb from Thomas Farms in Australia, cold-water twin lobster tails, and Royal Osetra caviar by the 30g tin.

The composed filets are worth knowing about if you want variety over size: a Trio of Medallions served Oscar-style with peppercorn sauce and bacon gorgonzola, a Filet Del Mar with crab and shrimp, and a New Orleans Mixed Grill with blackened shrimp and andouille.
