Why Tony’s made the SteakMap list

Tony’s names its steaks after people. The Dallas Clark is a 14oz Prime cut New York strip. Quinn’s is a bone-in filet. Jack’s is a dry-aged bone-in New York strip — and that last one is the reason this room is on our list.

Dry-aging is the most expensive thing a steakhouse can choose to do. Beef sits in a controlled room for weeks while moisture evaporates and enzymes break down connective tissue; the kitchen pays for weight it knows it will lose, then trims away the hardened crust before the steak ever reaches a grill. Nobody does it by accident, and in Cincinnati almost nobody does it at all — Tony’s is one of only a handful in the city offering a dry-aged cut.

They do it on a bone-in strip, which is the cut that rewards aging most. The bone insulates the meat during cooking and the fat cap renders inward, so the concentrated, faintly nutty character that aging produces has something to sit against.

The rest of the beef

Everything else is USDA Prime, the top grade the USDA awards. The menu runs a 9oz filet mignon and a 12oz center cut, a 24oz porterhouse, and a bone-in ribeye priced at market.

What to expect

Steaks arrive with a caesar salad and a choice of baked or Yukon gold mashed potatoes — more generous than most rooms at this level, where sides are strictly a la carte. If you want to push further, the toppings run from béarnaise through gorgonzola butter to miso truffle butter, and the sides are the classics done properly: five-cheese mac, creamed spinach, au gratin potatoes.

There is a full seafood side to the menu as well, including Chilean sea bass and organic Scottish salmon, so it works for a table that isn’t unanimous about steak.
