Why Carlo & Johnny made the SteakMap list

Carlo & Johnny is the Jeff Ruby group’s Italian-leaning room in Montgomery, and it carries the same beef as the flagship plus one cut none of the others have: a 32oz Bistecca alla Fiorentina, a porterhouse sliced for two with roasted garlic, herbs and extra virgin olive oil, served with potato gnocchi and a truffled marsala cream.

The Fiorentina is the Tuscan way of serving a porterhouse — cooked hard over high heat, rested, then carved off the bone and dressed simply with oil. Very few American steakhouses attempt it, because it requires the confidence to serve a thick steak rare in the middle and let the beef speak. It is the correct order here.

The aged beef

The group’s aging runs deep and this room gets all of it: the Bone-In Hatchet, a 30oz ribeye dry-aged 85 days, and the Cowboy Steak, a 22oz bone-in ribeye at 70 days. Both sit on the standing menu.

The Wagyu Beef Collection

Japanese A5 from Miyazaki — Grand Champion Miyazaki Citrus — as a 6oz filet mignon or an 8oz ribeye, with Australian premium wagyu beneath it in a 6oz filet, an 8oz ribeye filet and a 12oz New York strip.

The composed cuts

The house names its composed steaks after Cincinnati figures. Steak Collinsworth is an 8oz filet with king crab, asparagus, bordelaise and béarnaise. Steak Burrow is a 14oz blackened strip in creole crawfish sauce. And the Anthony Muñoz is an 8oz bacon-wrapped filet with shrimp, mushrooms, truffle bordelaise and béarnaise — a cut unique to this room.

Plain USDA Prime hand-cut filets run a 12oz barrel cut from the thickest part of the tenderloin and an 8oz center-cut petite. Everything gets the house seasoning, a 1400-degree broiled crust and a European-style butter finish.
