Why Son of a Butcher made the SteakMap list
Son of a Butcher gives wagyu its own section of the menu, separate from the steaks — which tells you the kitchen thinks of it as a different ingredient rather than an upgrade, and that is the correct instinct.
It shows in how the wagyu is used. There is a wagyu beef tartare with egg yolk, yuzu mustard, capers, pickled beech mushrooms and smoked gouda. There are Australian wagyu gyoza with soy-ginger dipping sauce. Raw and ground are two of the best applications for heavily marbled beef — the fat does its work without a grill rendering it away — and a kitchen that reaches for those first understands the product.
A kitchen that is clearly having fun
The rest of the menu backs that up. Prime Rib Wellington “egg rolls” with shaved prime rib. Million Dollar Deviled Eggs with sweet and spicy bacon and gold leaf, and Billion Dollar Deviled Eggs with king crab and caviar. A skillet croissant monkey bread with whipped hot honey and black garlic butter. Fire-roasted oysters with chili crisp and pickled Fresno chili. A raclette board with a whole roasted garlic head.
Desserts come from a named pastry chef, Chef Cristine, which is a detail most steakhouses of this size do not bother to advertise.
What to expect
The board is organized into shareables, a raw bar, salads, entrées, pasta, handhelds, a wagyu section and a steak section. Beyond the beef there are pan-seared sea scallops with corn and sweet pea velouté, a butter-poached Maine lobster bisque, and a Japanese crab cake with sticky rice and Asian remoulade.
This is a steakhouse for a table that wants to order a lot of small things and share, rather than four people each facing down a 20oz ribeye.
