Why Fleming’s Dayton made the SteakMap list
Dayton’s steak scene has a famous anchor in the Pine Club, which has been broiling on Brown Street since 1947. Fleming’s is the other end of the same city — the modern room, and the one to go to when what you want is graded beef and a wine list.
It is also, by our data, the only kitchen in Dayton putting a genuine dry-aged cut and graded Japanese wagyu on the same menu.
The wagyu
The headline is A5 wagyu strip from Kagoshima Prefecture at BMS 10-12, the top of the Japanese marbling scale and the highest score SteakMap has recorded in Ohio. It comes as a 4oz portion served rare on a hot stone with miso glaze and grated horseradish, which is the right size and the right treatment for beef that rich — a full-sized steak of it would defeat most people.
If that is too much, the Australian Carrara wagyu at BMS 8-9 sits below it in both a 14oz strip and an 8oz filet: real marbling, less intensity.
The rest of the beef
A 16oz dry-aged ribeye anchors the aged side. Everything else is USDA Prime — a 16oz New York strip, a 20oz bone-in ribeye, a 14oz petite bone-in ribeye, an 11oz filet, a 14oz bone-in filet, an 8oz petite filet and a 35oz tomahawk.
Worth asking about: the 9oz spinalis ribeye cap, listed as limited availability. The spinalis is the outer cap muscle of the ribeye, widely considered the best-eating cut on the animal, and most kitchens never separate it out.

Love coming here! For special occasions, it’s great to sit in the main dining room. For a fun night out, I love sitting at the bar for the happy hour deals. The service and food is always exceptional. I also really appreciate the table spacing, so it does not feel too crowded or get too loud here. Definitely recommend coming here!
Fleming’s Prime Steakhouse in Dayton delivers every time! The steak was perfectly cooked, tender, and full of flavor, and the sides were just as impressive. The service was top-notch and the wine list outstanding. A great spot for a special night out — highly recommend!
